When you upload a file the only usage for the file is to go into algorithms for transcription.
The file is then kept for you to review the transcription.
You can delete the file at any time by clicking on delete in your transcripts results page.
In order to perform the transcription, the file is stored on Google Infrastructure and cutting-edge speech recognition algorithms using Microsoft and Google technologies are applied on the file.
I cannot know in details what Microsoft and Google logs from the file but based on their privacy policy, they should only take reasonable data used for the transcription and delete files after usage.
You can delete this text transcript using the delete button from the add-on menu.
All files are deleted after 30 days.
You can buy credit using the top-menu of the add-on in Google Docs.

This is just one more example of how artificial intelligence can make our life simpler and help us to save time.
If you are interested on the technological aspect I would suggest you to have a look at available resources on the internet for Speech Recognition such as this course on Coursera or this nice available course from Stanford.
